I spent most of 2018 in the kitchen, trying new recipes and experimenting. Inspired by the food network and recipes on Pinterest, I found myself seeking pleasure through beautiful food creations. Now I'm not Nara Smith nor am I a trad wife wannabe, but one thing about it is that I've grown quite fond of creators in their SAHM / Trad era. I admire their patience, their dedication to cooking up a storm in the kitchen whilst holding the fort down - however I don't think I'm cut out for it. It takes a certain type of woman (or man) to spend hours on end cooking and cleaning, only for it all to be ate in less than 30 minutes day in day out.
Now if you are like me you will occasionally go into the kitchen to whip up something fun for your loved ones and recently my family has been requesting this delight. The Lemon and Olive Oil cake made famous by Meghan Markle. A sweet and tangy citrus cake with rich Olive Oil.
It takes 1 hour to prep and bake and doesn't need many ingredients. You probably have all the ingredients in your cupboard.
Here's What you need
- 1 cup olive oil , see notes in the post about choosing an olive oil for this recipe)
- 3 large eggs
- 1 1/2 cups granulated sugar, plus 2 tbsp for sprinkling the top
- 2 tsp vanilla extract
- 1/2 cup lemon juice
- zest from 3 lemons
- 1 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 cups all purpose flour
- 1 cup whole milk
- powdered sugar for dusting
- Preheat oven to 176°C. Prepare a 9" springform pan by greasing the bottom and the sides well, and lining the bottom with a circle of parchment paper. Wrap the outside with foil to prevent leaks.
Whisk together olive oil, eggs, and sugar.
Add the vanilla, lemon zest and lemon juice to combine.
In a separate bowl, sift the salt, baking powder, baking soda and flour together.
Slowly add the milk into the into the olive oil mixture, alternating with the dry ingredients. Try not to over-mix.
Once combined, pour the batter into the cake pan, and sprinkle granulated sugar over the top.
Bake for 50-55 minutes.
Remove from oven, allow to cool for 10 minutes in the pan before gently removing from the pan and onto a cooling rack.
Once cool dust the top with powdered sugar.
It should look a little like this.
Best enjoyed with a cup of tea.
